Herb Butter Chicken Thighs View Recipe Hide Recipe

Crispy, golden chicken thighs finished with garlic, butter, and fresh herbs for an easy dinner that still feels elevated.

Prep: 10 min Cook: 20–25 min Serves: 4

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3–4 garlic cloves, smashed
  • Fresh rosemary
  • Fresh thyme
  • Your favorite all-purpose chicken seasoning
  • Garlic seasoning
  • Onion seasoning
  • Smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Pat the chicken thighs completely dry with paper towels. This helps the skin become golden and crispy.
  2. Season both sides of the chicken with the chicken seasoning, garlic seasoning, onion seasoning, smoked paprika, salt, and black pepper.
  3. Heat a cast-iron skillet or heavy skillet over medium heat. Add the olive oil and allow it to become hot.
  4. Place the chicken thighs in the skillet skin-side down. Cook undisturbed for 8–10 minutes, or until the skin is deeply golden and releases easily from the skillet.
  5. Flip the chicken thighs and continue cooking for another 8–10 minutes.
  6. Check the thickest part of the chicken with a meat thermometer. The internal temperature should reach at least 165°F.
  7. Add the butter, smashed garlic, rosemary, and thyme to the skillet.
  8. Allow the butter to melt, then carefully tilt the skillet and spoon the garlic herb butter over the chicken for 1–2 minutes.
  9. Remove the chicken from the skillet and allow it to rest for 5 minutes before serving.
